Creamy Chicken Casserole

Have you ever had a day when you look around the kitchen and have no clue what to make? Yesterday was like that for me. I knew the kids needed to eat (again) and I didn't want to spend a lot of time in the kitchen. I also had just cleaned the kitchen and didn't want to get out every dish I own for some grand recipe. 


I looked in the fridge and noticed I had a bit of sour cream (I didn't measure at all) so I thought I'd build something around that. I also have chicken - so into the Instant pot it went (no seasoning). Then I made some wide egg noodles because I thought - how about a chicken casserole? So I preheated the oven for later. 

Something I didn't realize until afterwards is that the Instant pot coming to pressure and water boiling is about the same time-wise, so I had started them together and after about 20 mins total everything was done. Thinking ahead was my super power at the time.

I cut up the chicken a bit smaller so the kids could eat it. In a seperate bowl I mixed the sour cream with a can of cream of chicken (it's what we eat) and a load of cheese. Maybe 3 or 4 handfuls. I mixed then added the chicken and noodles. 

I placed everything in an oven dish and put some panko on top. I put it in the oven for about 15 mins. It could've used a little longer but the kids were hungry and everything was already cooked so I got it out and served it out to the kids. 

I looked up something similar to what I did so that you could have a recipe. The only thing I'd add to this is peas. It was really good.


I enjoyed the meal. The kids ate most of it. The chicken was great! I'm glad that I could put together an entire meal for my family from just one ingredient. It was fun.
